Peanut Mallow Bars
1 package yellow cake mix
2 tablespoons water
1/3 cup butter or margarine, softened
1 egg
4 cups miniature marshmallows
PEANUT TOPPING:
1 package (10 ounces) peanut butter chips
2/3 cup light corn syrup
1/4 cup butter or margarine
2 teaspoon vanilla
2 cups Rice Krispies
2 cups salted peanuts
Preheat oven to 350 degrees. In mixing bowl, beat the cake mix, water, butter and egg until blended (batter will be thick). Spread into a greased 9 X 13 inch pan. Bake for 22 to 25 minutes or until a toothpick inserted near the center comes out clean. Sprinkle with marshmallows. Bake 2 minutes longer. Place on a wire rack while preparing topping. In a large saucepan, combine the peanut butter chips, corn syrup and butter; cook and stir over medium-low heat until melted and smooth. Remove from the heat; stir in vanilla, cereal and peanuts. Spread over marshmallows. Cool completely. Cut with a sharp knife. Makes 2 1/2 dozen.
