While still not necessarily "low" calorie, this does shave off some calories from the traditional meat loaf recipe.
2 slightly beaten egg whites
3/4 cup soft bread crumbs or 1/4 cup dry bread crumbs
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper or shredded carrot
1/4 cup skim milk
2 tablespoons snipped parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried sage, thyme, basil or oregano, crushed
1 pound 90% lean ground beef
1 tablespoon ketchup or barbecue sauce
Preheat oven to 350 degrees. In medium mixing bowl, stir together the egg whites, bread crumbs, onion, green pepper or carrot, milk, parsley, (sage, thyme, basil OR oregano), salt and pepper. Add ground beef and mix well. In a shallow baking dish pat mixture into a loaf pan. Spread ketchup or barbecue sauce over top. Bake for 45 minutes to 1 hour or until no pink remains. Makes 5 servings.
