When we got our first microwave, way back when, my mother-in-law and I made EVERYTHING in the microwave. It was just the thing to do. This recipe submitted to the family cookbook by my cousin was a favorite of mine in the 80's and 90's when my kids were growing up. Turns out very nice and tastes good too!!!
1 can tomato sauce
2 tablespoons cider vinegar
1/2 teaspoon pepper
1/2 teaspoon garlic
1/2 teaspoon oregano
1/4 teaspoon salt
2 pounds ground beef
3/4 cup dry bread crumbs
1 medium onion, chopped
1 egg
1 teaspoon salt
1/4 teaspoon pepper
Mix tomato sauce, vinegar, 1/2 teaspoon pepper, garlic, oregano, and salt in bowl. In large bowl, mix beef, bread crumbs, 1/2 sauce mixture, and remaining ingredients until blended. Invert a 6 ounce custard cup in the center of a round shallow 2 quart baking dish. Put meat in dish, pour remaining sauce mixture on top. Cover with waxed paper. Microwave on high 10 to 12 minutes, rotating 1/4 after 5 minutes. Let stand 5 minutes.
