Whole Wheat Popovers

1 egg and 2 egg whites

1 tablespoon canola oil

1 1/2 cups nonfat milk

1 cup whole wheat flour

1/2 cup all purpose flour

Preheat oven to 450 degrees.  Generously coat 6 large or 8 small muffin cups with nonstick cooking spray.  In a bowl, whisk together, the egg and egg whites, oil and milk until well blended.  Add the flours and whisk until completely smooth and free of any lumps.  Fill each prepared cup 2/3 full.  Bake until the popovers are well browned and have puffed, about 30 minutes.  Lift carefully out of pan and serve with Honey Butter.

To make Honey Butter mix well equal amounts of softened butter or margarine and honey.  Add a sprinkle of cinnamon or pumpkin pie spice, if desired.
