Baked Pumpkin Donuts

Every Saturday morning we have bakery donuts. Since I started watching calories I decided to make a baked donut for myself instead of a big calorie laden bakery shop kind. These are delicious and I certainly don't feel like I'm missing out. They freeze very well too.

1 ½ cups flour

½ cup brown sugar

1 teaspoon baking powder

1 ½ teaspoons pumpkin pie spice

3 tablespoons applesauce OR 2 ½ tablespoon vegetable oil

½ cup milk

1 egg



Grease baked donut pans generously with vegetable spray or butter. In medium bowl mix in order listed. Do not over mix. Spoon evenly into donut pan and bake at 350 degrees for 10-11 minutes or until donuts spring back when lightly pressed. Cool a few minutes and transfer to wire rack. Roll in sugar coating. Makes 9.

Sugar Coating
¼ cup butter

2/3 cup sugar

1 tablespoon cinnamon

Melt butter in bowl, set aside. In another bowl mix sugar and cinnamon. Dip donut all over in butter and then roll in cinnamon and sugar.
