Butter Rum Applesauce Cake
1/3 cup butter (do not use margarine)
3/4 cup sugar
1 cup applesauce
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 tablespoons butter (do not use margarine
1 cup powdered sugar
1/2 teaspoon rum flavor
3 to 4 teaspoons half and half or milk
Preheat oven to 350 degrees. Grease an 8 inch square pan with cooking spray. In small saucepan melt 1/3 cup butter over medium heat. Cook until butter just begins to brown. Remove from heat and stir in sugar, applesauce and vanilla. In medium bowl mix flour, baking soda, cinnamon and salt. Stir in applesauce mixture and pour into pan. Bake 30 - 35 minutes or until toothpick inserted in center comes out clean. In small saucepan melt the 2 tablespoons of butter over medium heat until slightly browned. Remove from heat and stir in remaining ingredients until smooth and spreadable. Pour over warm cake. Cool 30 minutes and serve warm.
