Peanut Butter Cake

This cake is addicting. It is SO good. I make it as much as my waistline will allow!!!

2 cups flour

2 cups sugar

1 teaspoon baking soda

1 teaspoon salt

½ cup butter

½ cup vegetable oil

2 eggs

1 cup water

½ cup peanut butter

½ cup buttermilk

1 teaspoon vanilla

Peanuts for topping

Mix flour, sugar, baking soda and salt. In saucepan heat butter and water until boiling. Take off heat and whisk in peanut butter and oil. Let cool a few minutes, then whisk in eggs, buttermilk and vanilla until well blended. Add to flour and whisk until just combined Pour into greased 9X13 inch pan and bake at 350 degrees for 40-45 minutes until golden and knife inserted in center comes out clean.


Frosting
½ cup butter
½ cup peanut butter
6 tablespoons buttermilk
1 teaspoon vanilla
3 cups powdered sugar
Mix butter, peanut butter and buttermilk in saucepan. Bring to full boil. Beat in vanilla and sugar 1 cup at a time quickly. Pour over cake, work quickly. Frosting sets fast. Sprinkle with peanuts.
