2 medium yellow summer squash or zucchini
1 1/2 pounds ground beef
1 cup onion chopped
1 cup green pepper chopped
Salt and pepper lightly
2 cups grated cheddar, divided
3/4 cup milk
3 eggs
3 tablespoons flour
1 small can tomato sauce
1/2 to 3/4 cup French fried onions (optional)
Preheat oven to 350 degrees. Peel and slice squash in about 1/2 inch slices. Brown ground beef and add onion and pepper to soften. Sprinkle with salt and pepper. On bottom of a medium casserole dish place a layer of squash, overlapping a little. Sprinkle over that, 1 cup of cheese. Next put 1/2 the meat mixture. Repeat all 3 layers. In small bowl whisk together milk, eggs and flour. Pour over casserole. Spread tomato sauce over the top. Sprinkle with French fried onions if you want. Bake for 1 hour.
