Mandarin Chicken
3/4 cup uncooked long grain rice
2 or 3 boneless, skinless chicken breast halves
1 cup orange juice
1/2 cup chicken broth
Salt and pepper, to taste
1 small can mandarin oranges
Paprika, or paprika based seasoning mix
Preheat oven to 350 degrees. Spread rice in a greased shallow baking dish. Top with chicken. Pour orange juice and chicken broth over all. Salt and pepper to taste. Cover and bake for about 45 minutes, until chicken juices run clear and rice is tender. Before serving pour oranges over all and sprinkle with paprika.
