Orange Slice Cookies

One of my husband's favorites, he doesn't get these every year only because of having to sit down and chop all the sticky orange slices. BUT, if you do, you will have a nice chewy cookie with a completely surprising, unique flavor. When I DO get them made, they are gone in no time!!!

1 1/2 cups brown sugar

1 cup butter or margarine

2 eggs

1 teaspoon baking soda

2 1/2 cups flour

1 cup oatmeal

1/2 teaspoon salt

1/2 cup coconut

1 pound orange slices, cut in pieces

1/2 cup walnuts

 



Preheat oven to 350 degrees. Mix butter or margarine and sugar until creamy. Add eggs; mix well. Mix in flour, baking soda and salt. Stir in coconut, orange slices and walnuts. Drop by heaping teaspoonsfuls onto cookie sheet. Bake for 12 to 15 minutes or until golden brown.

(If you take ½ cup of the flour in a bowl and mix in the orange slices as you cut them, it keeps them from clumping together, don’t forget to subtract the flour from the recipe)
