Swedish Coconut Cookies

This is a wonderful recipe of my Mother's.  I'm including the directions the way I made them and the way we made them when I was little.  The dough is much softer my way, but it's easier to do.   ;~)  

2 cups butter or margarine

2 cups powdered sugar

3 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon vanilla

1 cup flaked coconut

Preheat oven to 350 degrees.  In mixer cream butter or margarine and powdered sugar.  Add flour, baking soda, baking powder and vanilla.  Stir in coconut.  Shape into a rectangular shaped roll, dough is very soft.  Wrap in saran wrap.  Freeze or refrigerate overnight.  Slice about 1/4 inch wide and bake for about 10 minutes.

(My Mother's directions)  Sift together dry ingredients.  Work in butter, vanilla and coconut as you would a pie crust.  Use hands to work until soft.  Shape in a roll.  Chill over night.  Slice and bake.
