5 tablespoons sugar (divided)
1 teaspoon cinnamon
2 tablespoons butter or margarine
2 medium apples, peeled, cored and thinly sliced
1/3 cup flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 eggs, separated
1/3 cup milk
Cool Whip or vanilla ice cream.
Preheat oven to 400 degrees. In small bowl combine 2 TABLESPOONS of the sugar with the ground cinnamon. In 10 inch skillet with oven-safe handle, melt the butter or margarine. Swirl around the skillet to coat the entire bottom. Sprinkle the cinnamon mixture evenly over the melted butter. Add sliced apples, cover and cook over low heat for 5 minutes, stirring once. Remove from heat. In medium bowl stir together flour, baking powder, salt, egg yolks, and milk. Beat with whisk until smooth. In another mixing bowl, using electric mixer, beat the egg whites with remaining sugar until soft peaks from. Carefully fold the egg white mixture into the flour mixture. Pour batter over apples in skillet. Bake uncovered for 10 to 15 minutes, or until golden and puffed. Loosen edges and invert a flat, round plate over the skillet. Hold plate and skillet together and flip on plate so apples are on top. Serve with Cool Whip or vanilla ice cream if desired. (add calories separate) Makes 6 servings.
