6 cups apples, diced and peeled
1/2 cup water
1/2 teaspoon butter
3 cups sugar
2 cups brown sugar, packed
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 package liquid pectin
In large kettle, combine apples, water and butter. Cook and stir over low heat until apples are soft. Add sugars and spices and bring to rolling boil. If the apples are a little too chunky scoop out with slotted spoon and pulse in the food processor. Do not puree, leave chunks. Return to sugar. Add pectin while at rolling boil and boil for exactly one more minute, stirring constantly. Remove from heat, skim off any foam and ladle into hot clean jars. Process in boiling water bath.
