Aunt Carrie's Tomatoe Soup
Aunt Carrie born in 1896, was "Nanny's" sister-in-law. I was fortunate enough to have met this wonderful and very energetic lady. She had a beautiful large house with apartments and had student roomers from the small college in Oneonta, New York. The kids loved her and she enjoyed having them!!! I'm sure it's what kept her going to the young age of 99. She passed away 1 month before reaching 100. This recipe is written on a VERY fragile brown piece of lined paper.
1 peck ripe tomatoes
2 heads celery
2 large onions
Cook until mushy with 2 quarts water-Strain.
1 1/2 cups flour (mixed with water)
1 1/2 cups butter
1/4 cup salt
1/4 cup sugar
1/4 teaspoon cayenne
Cook ten minutes and can.
Makes eight qts. after cooked. Don't use all pepper.
