This was one of the first recipes my aunt contributed to our family cookbook.
3 eggs, beaten
1 1/2 c. sugar
2 c. grated squash, unpeeled
1 tsp. baking soda
1/8 tsp. salt
1/2 c. chopped nuts
1 c. oil
1/2 tsp. baking powder
2 tsp. cinnamon
2 tsp. vanilla
3 c. flour
Mix; bake in greased and floured loaf pan, about 1 hour at 350°. This makes 2 large loaves or 6 small ones.
