Ruth's Caramel Crackers

Ruth was a part of "the group" as my in-laws called them, that they hung out with at the senior center. They were always having potlucks and always exchanging their delicious recipes.

2 boxes 9 oz each Ritz Bitz crackers

1 cup dry roasted peanuts

1/2 cup butter or oleo

1 cup sugar

1/2 cup light corn syrup

1 teaspoon vanilla

1 teaspoon baking soda

Preheat oven to 250°. Combine crackers & nuts in 2 greased large shallow baking pans. I used jelly roll pans. In sauce pan bring butter, sugar & corn syrup to a boil & cook for 5 minutes. Remove from heat, add vanilla & baking soda then pour over crackers & nuts. Stir well, bake 1 hour, stirring every 15 min. Pour onto wax paper & then break apart.
