I loved this dessert. I don't have it in my collection, only because my boys are not fond of cheeses and it's really never been "voted on". I might just "squeeze" it in next time I have company. I would use small curd cottage cheese for this and do it in my mix master just so it's a little smoother. Not sure I'd go as far as the food processor as it might not set???
4 well-beaten eggs
1 c. sugar
1 tsp. vanilla
1/4 tsp. salt
1/2 pt. cream
2 lb. cottage cheese
4 T. cornstarch
Mix ingredients in order listed.
CRUST:
30 graham crackers, crushed
1 c. sugar
1/2 c. butter
1 tsp. vanilla
Pat 1/2 crust on bottom of pan. Pour cheese mixture over this. Sprinkle top with remaining cracker mixture. Bake 1 hour at 325°.
