This is very easy and very good. It's from my mother's recipe box on a nice orange "70's" looking card. I also have this as part of my Becky's Cookbook collection since I do also make it for my family.
1 #2 can green beans, drained
2 c. raw carrots, slivered
2 c. chopped celery
1 1/2 c. raw onion, cut in long strips
1 T. sugar
2 1/2 t. salt
dash pepper
3 T. minute Tapioca
6 T. melted butter
3/4 c. green pepper, cut in long strips
1 #2 1/2 can stewed tomatoes
Butter a lg. 3 qt. casserole. Place above ingredients in the casserole in order listed. Cover casserole. Bake at 350° for 1 1/2 hr. This is even more delicious warmed over.
