My Mother In Law made this recipe SO often. I have it also in my regular Becky's Cookbook Collection. It was her favorite potluck dish.
1 c. ch carrots
5 c. thinly sliced zucchini unpeeled
1/2 c. butter (1 stick)
1 pkg. 6 oz. chicken flavor stuffing mix
1 can 10 1/2 oz. cond. crm mushroom soup
1 c. sour cream
1/4 c. ch. onions
Place carrots in large pan & boil 5 minutes, add zucchini, cover & boil 5 minutes longer. In skillet melt butter, stir in contents of seas. packet from stuffing mix. Add stuffing crumbs & stir till moistened. Spoon 2/3 stuff. mixture in bottom of 9x12 pan. Drain cooked veg. Mix with soup & sour cream & onions. Place on top of stuff. mix. Sprinkle with rest of 1/3 crumbs. Bake 350 - 40 min. 6 servings.
