Blueberry Cobbler

I made this recipe as is, but next time I'm going to use 1/4 cup sugar/Splenda mix in place of the 1/2 cup sugar, which will save me enough calories to add a small dollop of light vanilla ice cream.

1/2 cup sugar

1 tablespoon cornstarch

4 cups fresh or frozen blueberries

1/4 cup cold water

3 sheets phyllo dough, thawed

Butter flavored vegetable oil spray

1 tablespoon sugar

Preheat oven to 375 degrees. Mix 1/2 cup sugar and the cornstarch in a 2 quart saucepan; stir in berries and water. Heat to boiling, stirring constantly. Boil and stir 1 minute. Pour into lightly sprayed 9X9 inch square pan. Lightly spray each sheet to cover the filling. Bake at 375 degrees until golden, about 15 minutes. Top with a small dollop of ice cream. (add calories separate) Makes 6 servings.
