1 1/3 cups flour
3 tablespoons baking powder
1 1/2 teaspoons cocoa powder
1 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1 1/4 cups milk
3 egg whites
3 tablespoons molasses
3 tablespoons vegetable oil
In medium sized bowl mix dry ingredients. In small bowl whisk milk, egg whites, and molasses. Make a well in dry ingredients and pour wet ingredients into it. Stir just enough to moisten. Heat lightly oiled griddle or frying pan over medium high heat. Pour or scoop batter onto griddle, using 1/4 - 1/3 cup for each pancake. Brown on both sides.
