Polish Apple Pancakes

1/2 cup flour

1/2 tablespoon sugar

1/4 teaspoon salt

1/2 egg

1/2 cup skim milk

1/2 tablespoon vegetable oil

2 large apples, peeled and thinly sliced

In a bowl, combine flour, sugar, and salt.  In another bowl, lightly beat egg; add milk and oil.  Add to dry ingredients and stir until smooth.  Fold in apples. Heat a griddle coated with non-stick spray.  Pour batter by 1/2 cupfuls onto hot griddle and spread to form 5 inch circle.  Turn when bottom is browned.  Cook until second side is golden brown and apples are tender.  Makes 2 servings, 3 pancakes each.
