1 1/3 cups flour
2 tablespoons brown sugar
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon allspice
1 1/2 teaspoons cinnamon
1/2 teaspoon ginger
1/4 teaspoon salt
1 cup milk
2/3 cup pumpkin puree
1 egg
1 tablespoon vegetable oil
1 tablespoon cider vinegar
In medium sized bowl mix milk, pumkin, egg, oil and vinegar. In small bowl combine flour, brown sugar, baking powder, baking soda, spices, and salt. Stir into pumpin mixture. Heat a lightly oiled griddle over medium high heat. Use approximately 1/3 cup for each pancake, brown on both sides. Makes about 3-4 servings.
