Center-cut pork loin roast

At medium heat, boil a 1,2 or 3 pound pork roast in large kettle of water with onion and bay leaves for 3 hours or until tender. Save juice and strain. Preheat oven to 350 degrees. Peel as many potatoes as you want. Cut in halves or quarters. Lay in a 9x13 inch pan or roaster. Put meat in the middle of pan; add carrots and onions. Pour juice from meat in pan, leaving tops of potatoes exposed. Top each potato with a small dollop of butter and sprinkle with salt and pepper. If juice cooks away, add more. Bake 1 to 2 hours, until potatoes are nicely browned.
