Roasted Pork Tenderloin
1 pork tenderloin (about 1 pound), trimmed
Cooking spray
Put 1/3 to 1/2 cup marinade or sauce of choice in a plastic bag or shallow dish. Turn to coat. Marinate in refrigerator 1 hour or up to 24 hours. Preheat oven to 450 degrees. Remove pork from dish reserving marinade. Place pork on a broiler pan, coated with cooking spray. Brush with reserved marinade. Bake for 20 to 30 minutes. Thermometer should register 155 degrees and meat slightly pink. Remove from oven and let sit 5 minutes. Makes 4 servings.
Sweet & Tangy Sauce
1/4 cup packed brown sugar
2 tablespoons cider vinegar
1 tablespoon tomato paste
1 1/2 teaspoons chili powder
1 teaspoon cumin
1/4 teaspoon black pepper
Combine ingredients.
