3 cups Captain Crunch Cereal (or more if needed)
2 cups Corn Flakes (or more if needed)
1 egg
1/2 cup milk
1/2 cup flour
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon pepper
4 chicken breast halves, cut in 1 ounce tenders
Vegetable oil
Heat oil in a large skillet or deep fryer to 355 degrees.
Coarsely grind or crush the two cereals, mix and set aside. Beat the egg with milk and set aside.
Stir together the flour, onion and garlic powders and pepper; set aside.
Dip the chicken pieces in the seasoned flour and coat well; shake off the excess flour. Dip in the egg wash, coating well, then dip in the cereal mixture, coating well.
Drop coated chicken tenders carefully in the hot oil and cook until golden brown and fully cooked, about 6 to 7 minutes depending on size. Drain on paper towel and serve with Honey-Mustard Sauce.
HONEY MUSTARD SAUCE
1/2 cup mayonnaise
2 tablespoons honey
1 tablespoon prepared mustard
Combine all ingredients and mix well.
