2 pounds sweet potatoes
3/4 cup butter or margarine
3/4 cup brown sugar
1 1/2 cups miniature marshmallows, divided
cinnamon, to taste
nutmeg, to taste
Preheat oven to 400 degrees. Grease an 8 X 8 inch square pan. Bring a large pot of water to boil. Add potatoes and boil until slightly underdone. Drain, cool and peel. In large saucepan over medium heat combine butter or margarine, brown sugar, 1 cup marshmallows, cinnamon and nutmeg. Cook stirring occasionally until marshmallows are melted. Stir potatoes into marshmallow sauce. While stirring mash about half of the potatoes and break the other into bite sized pieces. Transfer to prepared dish and bake for 15 minutes. Remove from oven and cover with remaining 1/2 cup of marshmallows. Return to oven and bake until marshmallows are golden brown.
