Grandma Green's Stuffing

This is a real family hand me down. It is from my husbands great-grandmother, made by his grandma and mom.

2 loaves Italian bread, cubed and soaked in water (if you don't have a crusted bread, toast bread first)

1 pound pork sausage (my mother in law used ground beef)

3/4 bunch celery, chopped

1 1/2 large onions, chopped

Poultry seasoning, salt and pepper, to taste

3 eggs

Chicken broth

The night before, saute celery and onion in sausage until tender.  Squeeze water out of bread VERY well.  Add poultry seasoning, salt and pepper to taste. Add eggs and mix well. Refrigerate overnight.  Add chicken broth to moisten.  Bake uncovered about 1 hour and 15 minutes at 350 degrees, basting as needed.
