Pineapple/Apple Fritters

1 cup flour

1/4 teaspoon salt

1 tablespoon sugar

1 teaspoon baking powder

1 egg, beaten

1/4 cup milk

1 tablespoon oil

1 cup crushed pineapple, drained OR 1 cup apples, finely chopped

oil for frying

powdered sugar

In fryer skillet or deep fryer, heat oil to 365 degrees. Combine flour, salt, sugar and baking powder in bowl. Mix together: beaten egg, milk, 1 tablespoon oil and fruit. Lightly stir into dry ingredients, but do not overmix. Drop dough into hot oil a teaspoonful at a time. (If you dip the spoon into the oil before loading it up with batter, it will slip right off into the oil) Fry fritters until golden brown and cooked in the center, 3 to 5 minutes. Drain on paper towel. Sprinkle with powdered sugar.
