Sweet Potato Puffs
1 1/2 pounds sweet potatoes, cooked and mashed
2 tablespoons margarine, melted
1/3 cup firmly packed brown sugar
1/2 teaspoon cinnamon
1 teaspoon vanilla
8 large marshmallows (I used 5 or 6 little ones squished together to equal one large)
2 cups cornflakes, crushed
Preheat about 4 inches of oil in pan on medium to medium high. Combine sweet potatoes, margarine, brown sugar, cinnamon, and vanilla; chill. Form balls around marshmallows with potato mixture and roll in cornflakes. Fry in skillet about 15 to 30 seconds or until brown.
