Oat Bran Pancakes-Peggy

2 slightly beaten egg whites

1 1/3 cups water

Sliced nectarines, raspberries and/or blueberries

Sifted powdered sugar

2 cups oat bran baking mix

Nonstick spray coating

In a medium bowl, combine egg whites and water. Add baking mix. Beat with a beater until well blended. Spray a cold griddle or heavy skillet with nonstick coating. Preheat griddle. Pour about 1/4 cup batter onto griddle for each pancake. Cook over medium high heat for 2 to 3 minutes, or until light brown on both sides, turning once. If desired, serve with fresh fruit and sprinkle with powdered sugar. Makes 12 pancakes.
