Black Bean and Veggie Burritos - Amy

3/4 cup chopped onion

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

1 cup chopped red bell pepper

2/3 cup frozen corn, thawed

1 2/3 cup canned black beans, drained

1/2 cup Mexican style stewed tomatoes, drained (Rotel - green chillies and onions)

Grated cheddar cheese

Sour cream

Cilantro

Tortillas (flour)

Combine onion and vegetable spray (or oil), stir over medium heat until onions are translucent. Add cumin and chili powder. Add peppers, corn and saute' until almost tender. Add beans, tomatoes and jalepeno. Bring to simmer. Season with salt and pepper, remove from heat. Serve rolled in tortillas with cheese, sour cream and cilantro.
